A Chinese language teacher shares her teaching methods

Chen Hui, an international Chinese education teacher, has been teaching at the Confucius Institute at the University of Novi Sad (诺维萨德大学) in Serbia for seven years.
Last year, the 45-year-old gave a Mid-Autumn Festival-themed class for Serbian President Aleksandar Vucic’s 8-year-old son and his friends. “They watched an animated video about the festival and asked about Chinese mythology (神话), such as why Chang’e can fly to the moon after eating the elixir (神药),” said Chen.
With a bachelor’s degree in English and a master’s degree in linguistics (语言学), Chen’s journey into international Chinese education began with teaching international students at Zhejiang Agriculture and Forestry University. Her teaching career led her to apply for a position at the Confucius Institute, a collaboration (合作) between her university and the University of Novi Sad.
Teaching Chinese abroad typically requires a Certificate for Teachers of Chinese to Speakers of Other Languages (CTCSOL, 国际中文教师证书). The CTCSOL exam’s content resembles (与……相似) that of the qualification test for Chinese language teachers in domestic middle schools. No matter your professional background, getting this certificate means you’re qualified to teach.
“The greatest challenge for most teachers of international Chinese education is to teach students of various ages and backgrounds, which requires different teaching methods,” said Chen. Besides standard courses for HSK (汉语水平考试), for younger learners, Chen designs interactive activities like kite-making to make learning Chinese more enjoyable. For older students, she tailors lessons based on individual interests. For example, one student loves Chinese pop songs, such as Melody by David Zee Tao (陶喆). So, Chen encouraged him to learn the language through songs.
When teaching government officials and university professors, Chen delves into a broad range of topics related to China and its development. During classes with Marina Sokovic, the assistant minister of the Department of Science in Serbia, Chen engaged her in conversational practice. They discussed Chinese beverages (饮料), with Sokovic expressing a liking for Moutai.
Serbia currently hosts three Confucius Institutes. “As Chinese language education gains momentum (动力), I see a bright future for the profession, with more young people joining the ranks of international Chinese educators, infusing (注入) the field with energy and vitality,” noted Chen.

Chinese language teachers sent abroad usually fall into two groups: volunteer teachers and State-sponsored (公派的) teachers. Volunteer teachers are recruited (招聘) by Chinese universities affiliated with Confucius Institutes. State-sponsored teachers are recruited and managed by the Center for Language Education and Cooperation (中外语言交流合作中心).

Philadelphia, often referred to as Philly, is a major city located along the Delaware River in Pennsylvania, a state in the northeastern United States. Founded in the 1680s by an Englishman William Penn, who also planned its layout (布局), the city was named Philadelphia—a word Penn understood to mean “city of brotherly love” in Greek.

The museum was created to elevate public recognition of the Constitution, its history and its importance today. Visitors here are presented with the idea that the most important part of American constitutional democracy (立宪民主) is the individual citizen.
Philadelphia also offers plenty for visitors who are less concerned about history and more concerned about their stomachs. There are many food choices for foodies, including a typical sandwich—the Philly cheesesteak, usually made of thin pieces of meat covered with cheese, offered with onions and other toppings and served on a long roll. Growing up in an Italian-American household was, for me, pretty special. My mother, Gina, an immigrant (移民) from Italy, held on to (守住) so many of her family’s traditions that at times, regardless of the fact that I was living in America, our home felt like in Italy.
To this day, my mother only speaks to me in Italian. She may speak in some English terms and expressions from time to time, but our conversations are, for the most part, in her mother tongue. And most of those conversations are about food. For us food →Italian food is an important part of our lives. The food my mother prepared for me and my sister as children is the same food my grandmother created in her small farm kitchen high up in the mountains.
One of my family’s dishes of heritage I made sure to learn and perfect is my mother’s arancini divisor (Italian rice balls) Arancini, in Italian, means little oranges. After you roll some leftover rice into a small ball, place a piece of mozzarella (马苏里拉奶酪) in the center, then bread that and fry it, the golden outside resembles (像) one of our favorite fruits. For my family, it also showcased my mother’s ability to always find a delicious way to never let anything go to waste: Last night’s good rice was repurposed (改变用途) into this perfect mid-day snack or dinner appetizer.
So, when I take a perfect little arancini out of the hot oil and crack it open, I am immediately transported back to my childhood. I am a little girl getting off the bus and running through the back door to the smell of last night’s rice transformed into sticky, delicate goodness. This small snack symbolizes so many important elements in my life: my mother’ s waste-not philosophy, her ability to take a few simple ingredients and transform them, and finally, the way she carried her mother’s recipes to the U. S. in her mind and heart so she could, years later, teach me about my heritage through food.
Eating arancini, and all the other recipes my mother continued to make here in the U. S. after leaving Italy, allowed her to teach me who I am, where I come from, and why I should be proud of it all.

Deep in the forests in the Siem Reap Province, Cambodia, the five lotus-flower-shaped towers of the large Angkor Wat stand tall towards the sky. When tourists arrive at the main gate, they will be attracted to the large temple (庙宇).
Angkor Wat was part of a city as big as London. This city was at the center of an empire that covered areas from southern Vietnam to Laos, and from the Mekong River to Eastern Myanmar between the 9th and 15th centuries. By around 1500 A.D., the Khmer capital was left behind empty, most likely after heavy floods and long droughts. Later, forests were all around the temples and buildings that lay hidden until their rediscovery in 1860.
Angkor Wat’s inclusion in UNESCO’s World Heritage List in 1992 marked a milestone in the country’s recovery. The action of the protection and development of this cultural site is a typical example of international solidarity and proves to be one of UNESCO’s most important achievements. Thirty countries and a group of experts were brought together to work on scientific projects for the restoration (修复) of these amazing sites. The aim was to support long-term and environmentally friendly progress.
Angkor has become a living laboratory showing the beauty of historic buildings. Walking through the temple, people see hundreds of beautiful figures on the walls telling the stories of these ancient people, and long hallways lined with many attractive supports. The fact that Angkor was taken off UNESCO’s List of World Heritage in Danger just twelve years later is a great achievement for most people of Cambodia.
A large number of visitors from all over the world make their journey there enjoying the beautiful scenery. Shangri-La was a key staging post in the Yunnan-Xizang branch of the Ancient Tea-Horse Caravan Route, a trade route that started in the Tang Dynasty and prospered in the Ming and Qing dynasties connecting Pu’er in Yunnan with Lhasa in today’s Xizang Autonomous Region.
About seven years ago, Tsering Dondrub, a 33-year-old business owner in Shangri-La, Yunnan Province, bought three traditional Tibetan houses in Wugong Village, Xiaozhongdian Town, with plans to renovate them into hostels. However, by 2020, Tsering Dondrub had still not found a partner who was willing to renovate the three houses, which otherwise would be torn down.
In May 2020, Nanjing-based bookstore brand Librairie Avant-Garde opened a branch in a village in Shaxi ancient town, Dali Bai Autonomous Prefecture, Yunnan. Founder Qian Xiaohua and rotating chairman Zhang Ruifeng soon started looking for other opportunities in the province.
When Tsering Dondrub first showed them the three ramshackle Tibetan houses, they were quite impressed. A year later, when they viewed the houses again, Qian decided to rent them. They invited architect Zhao Yang to design the renovation plan.
In 2022, when Zhao first saw the three run-down Tibetan houses standing in the field, he was surprised to find that the wooden structure of the three houses is different from those of the houses of the Han people in their building logic. In the wooden structure of a Han house, the pillars on the ground and first floors are often a single piece of wood. However, the pillars on the ground floor of a Tibetan house were shorter, more slender and simpler than those on the first floor. The ground floor was inhabited by livestock and the first floor by people. “I see it as a precious anthropological legacy that we should carefully preserve,” he says.
The three houses were renovated for books, coffee, and creative cultural products, with efforts made to preserve all original wooden structures. Overlooking the Haba Snow Mountain across the Jinsha River, the bookstore offers 15,000 books on humanities and social sciences, 100 types of creative cultural products, and materials on local cultures, geography, languages, and history.
“It’s great to find many books on Tibetans and Shangri-La here. These books can connect different cultures,” says Tsering Dondrub.

I grew up in Beirut, Lebanon, where an amazingly rich cooking tradition that has been perfected for thousands of years taught me the love of good food. Yet, these were times when globalization had not reached the kitchen table, and I had limited exposure to the various cuisines we take for granted here in Vancouver. I had never had guacamole until I moved to North America!
I have Armenian heritage, which means that I have recipes passed down to me from my mother. I got my love of cooking from her. My two children have had the chance to enjoy food from everywhere in the world. They don’t find it remarkable at all that in the same week, they could go on a worldwide cuisine journey that could include sushi, samosas, tamales, and tabboulch. Through food, they have come to learn about and celebrate the rich cultural traditions and identities that make Vancouver a wonderful diverse city.
A culture’s food vocabulary is a window into its values and priorities. A typical Italian child can name twenty-two different kinds of pasta, whereas a child in Canada might know three to four different kinds. When thinking of fried eggs, the French say “breakfast.” Americans say “cholesterol (胆固醇).” The French think of the cooking experience; Americans think of what is entering the blood.
When I first arrived at UBC 22 years ago, the food scene on campus was not good. We have come a long way and there is now a wide range of eating options, but we can do better. Through food, the university can promote cultural understanding and a way of life that preserves our planet.

How pre-cooked food options are here to stay
The growing popularity of pre-cooked food in China-also known as the ready-meals industry — has made it a capital darling (宠儿).
Deloitte’s consumer goods and retail industry head, Zhang Tianbing, now says China’s pre-prepared food market looks to have a(n) 54 future, with the business becoming more mature. “Pre-prepared dishes meet the preferences of a new generation of consumers for healthier and a wider 55 of meals,” Zhang said.

As a foreign student from New Zealand, I was thrilled to have the opportunity to 64 the Water-Splashing Festival (泼水节) in China and I was eager to devote myself to the cultural experience.
